Recipe: Roasted corn
Put on fire/grill
6-8 minutes on each side, or until kernels darken slightly.
When the
corn
is slightly browning on the very tips it is done.
Squeeze
fresh lime
over them and sprinkle little
chaat masala
.
Recipe: Kerala chips
Use kitchen slicer to have thin bitter gourd slices.
Remove seeds with carving knife.
Put them on kitchen towel and cover with kitchen towel.
When ready to fry, put little
potato starch
. Put them in hot oil then reduce to medium fire.
Fry until golden but not brown.
When cold, sprinkle little
salt and red chili powder.
Recipe: Aloo Bhaigan
Masala: 1 tbsp salt, 1 tsp turmeric powder, 1 tsp red chili, 1 tsp coriander powder.
Put inside bhaigan and coat the potato.
Cumin seed, oil.
Potato and aloo bhaigan to roast.
Tomato puree (small one).
Close the lid. Whistle 1 time.
