Ingredients
- Spicy sauces
- Chopped onion
- Minced garlic
- Diced capsicum
- Chopped tomato
- Eggs
- Chopped parsley
- Chili powder
- Cumin powder
- Paprika
- Cayenne pepper
- Salt, sugar & pepper
- Heat oil and pan-fry sliced Spicy Sausages. Put aside.
- Slowly warm olive oil.
- Add half onion. Saute till it softens.
- Add one minced garlic. Saute till it is fragrant.
- Add one diced capsicum.Saute for 5-7 minutes over medium until softened.
- Add 2 chopped tomatoes and 2 tbsp tomato paste.
- Add 1 tsp chili powder, 1 tsp cumin powder, 1 tsp paprika, a pinch of cayenne pepper, a pinch of sugar, salt and pepper.
- Simmer over medium for 5-7 minutes till it reduces. Add hot water if needed so that the mixture won't get burned.
- Add fried spicy sausages and mix.
- Crack 2 eggs, one at a time, directly over the mixture.
- The eggs will cook "over easy" style on top of the mixture.
- Cover the pan. Allow mixture to simmer for 10-15 minutes, or until the eggs are cooked.
- Garnish with chopped parsley and pepper.
