Ingredients:
- 2 tsp agar-agar powder
- 30 g sugar
- 250 ml water
- 5 tsp almond powder (Midas brand)
- 400 ml unsweetened soy milk (or Almond flavored Soy Milk)
- 1 can of longan
- Freeze a can of longan for 8 hours or more.
- Mix 2 tsp agar-agar powder, 250 ml water and 30 g sugar in a saucepan and bring to boil using medium heat.
- Lower the heat and stir for 10 minutes until agar-agar completely dissolve. Or until the liquid turns crystal clear.
- Add 5 tsp almond powder and stir to mix well. Remove from heat.
- Add 400 ml soy milk. If you spot tiny dots or lumps in your milky liquid, boil over medium heat to fully dissolve the agar-agar powder.
- Pour the liquid through a strainer into rectangular plate/tray.
- Once agar-agar is cool, put in the fridge to chill it.
- To serve, use a fork to break frozen longan and syrup. Top the almond jelly cubes with frozen longan and syrup slush.
For richer flavor, use fresh milk + 1 tbs of evaporated milk and 50g sugar.
