Amond Jelly with Longan

Ingredients:

  • 2 tsp agar-agar powder
  • 30 g sugar
  • 250 ml water
  • 5 tsp almond powder (Midas brand)
  • 400 ml unsweetened soy milk (or Almond flavored Soy Milk)
  • 1 can of longan
  1. Freeze a can of longan for 8 hours or more.
  2. Mix 2 tsp agar-agar powder, 250 ml water and 30 g sugar in a saucepan and bring to boil using medium heat.
  3. Lower the heat and stir for 10 minutes until agar-agar completely dissolve. Or until the liquid turns crystal clear.
  4. Add 5 tsp almond powder and stir to mix well. Remove from heat.
  5. Add 400 ml soy milk. If you spot tiny dots or lumps in your milky liquid, boil over medium heat to fully dissolve the agar-agar powder.
  6. Pour the liquid through a strainer into rectangular plate/tray. 
  7. Once agar-agar is cool, put in the fridge to chill it.
  8. To serve, use a fork to break frozen longan and syrup. Top the almond jelly cubes with frozen longan and syrup slush.
For richer flavor, use fresh milk + 1 tbs of evaporated milk and 50g sugar.
