Recipe: Aloo Bindi

Ingredients

  • Bindi
  • Potato
  • Onion chopped 1 medium
  • Green chili chopped 1
  • Fresh coriander leave
  • Mustard seed half tsp
  • Jeera half tsp
  • Amchur (dry mango powder) half tsp
  • Coriander powder 1 tsp
  • Red chili powder 1 tsp
  • Turmeric powder half tsp

  1. Heat oil. Put potato until half cook.
  2. Put half tsp mustard seed and half tsp jeera.
  3. Put bindi and onion and green chili. 
  4. Put half tsp sugar to let bindi retains its green color.
  5. Once potato and bindi are soft, put all masala - red chili powder, half tsp turmeric powder, half tsp amchur, 1 tsp coriander powder and salt.
  6. Add sprinkle of water to avoid burning.
  7. Garnish with freshly chopped coriander leaves.
