Recipe: Bubur Ayam

Chicken stock, Shredded Chicken, Shredded Omelette, Keropok

Half chicken
Half onion, cut into 4
4 garlic
3 spring onion
2 Indonesian bay leaves
3 kaffir lime leaves
1 lemongrass, bruised
Salt


1) Blanch chicken with 1 kaffir leave and 1 spring onion, little salt.
2) Then remove from water and put in fresh water, and all other ingredients. Pressure cook.
3) Remove the chicken and remove the herbs.

4) Pan-fry chicken until brown. Shred it. You can flavor it with little salt and lime.

5) Beat 2 eggs with little salt. Pan-fry and cut with scissors after cool.

6) Deep fry prawn crackers (keropok).


Porridge & Fried Peanut

3/4 cup broken rice
1/5 star anise
1 cloves
6 black pepper whole
Salt


1) Pressure cook rice with chicken stock and all spices.
2) Fry peanut on low fire until crunchy.



Yellow Gravy

8 pearl onions
5 garlic
1 Bombay onion
4 candlenuts
3cm ginger
4cm fresh turmeric

2 kaffir leaves
2 Indon bay leaves
1 lemongrass, bruised

1) Grind all ingredients with little water.
2) Put 2 tbsp cooking oil. Add the mixture.
3) Add other herbs leaves.
4) Add 400ml chicken stock/water, salt, black pepper, very little sugar.

Recipe: Blueberry Muffin

All-purpose flour 2 cups
Baking powder 1.5 tsp
Salt 1/2 tsp
Unsalted butter, softened 1/2 cup (1 stick)
Sugar 1 cup
Eggs 2 large
Vanilla extract 2 tsp
Whole milk 1/2 cup
Blueberries 2 cups


Streusel Topping
Sugar 4 tbsp
Flour 1 tbsp
Vege oil 2 tsp


1. Preheat oven 350F. Lightly grease or put paper muffin liners.
2. Whisk flour, baking powder and salt together.
3. In another bowl, beat butter and sugar until light and fluffy. Add eggs, vanilla and milk.
4. Add flour and stir just combined.
5. Put in blueberries.
6. Sprinkle streusel topping.
7. Bake for 20-25 minutes.

Potatoes 2
Red chili powder 1/4 tsp
Turmeric powder 1/4 tsp
Coriander powder 1/2 tsp
Jeera powder 1/4 tsp

Gobi 2 cups
Turmeric powder 1/2 tsp

Recipe: Mooli Pranta

Radish grated 2 cups
Salt 1/2 tsp
Green chili 1
Red chili powder 1/2 tsp
Turmeric powder 1/4 tsp
Coriander powder 1/2 tsp
Amchur 3/4 tsp
Coriander leaves

1. Mix salt in radish and rest 20 minutes. Squeeze water out.
2. Add all masala.
